Ethiopian Pepper (Berbere)
This blended pepper is the pivot of Ethiopian cuisine and is used as a universal seasoning for most red sauces, meats, vegetables and legumes. Harvested in Ethiopia, this deep red chili pepper is blended with sun dried organic shallots, ginger, garlic, Sacred Basil (Bessobela), Cardamom (Korerima), Rue (Tena Adam) and various wild culinary herbs and spices. Berbere contains Volatile oils, capsaicin, carotenoids, steroidal saponins, flavonoids, Berbere is believed to help with Carminative, relieving spasm; general tonic increasing circulation, anticoagulant; for peptic ulcer; to reduce cholesterol ,topically counter-irritant, anesthetic/analgesic and antiseptic.
 
Ethiopian Hot Chili pepper (Mitmita)
Mitmita is a powdered seasoning mix used in the cuisine of Ethiopia. It is orange red in color and contains ground African birdseye, chili peppers, cardamom seed, cloves and salt. It occasionally has other spices including, but not limited to, cinnamon, cumin and ginger. mitmita may be presented as a condiment and sprinkled on other foods or spooned onto a piece of injera, so food can be lightly dipped into it. Same as Berbere, Mitmita is believed to help with Carminative, relieving spasm; general tonic increasing circulation, anticoagulant; for peptic ulcer; to reduce cholesterol.
 
Wild Black Pepper (Kundo Berbere)
Black pepper is produced from the still-green unripe drupes of the pepper plant. The drupes are cooked briefly in hot water, both to clean them and to prepare them for drying. The heat ruptures cell walls in the pepper, speeding the work of browning enzymes during drying. The drupes are dried in the sun or by machine for several days, during which the pepper around the seed shrinks and darkens into a thin, wrinkled black layer. Once dried, the spice is called black peppercorn. On some estates, the berries are separated from the stem by hand and then sun-dried without the boiling process. Kundo Berbere contains Volatile oils including thymol, camphene and terpenes; alkaloids, potential health benefits of Kundo Berbere are: – Stimulates the digestive and circulatory systems; for rheumatic pain, gum diseases and toothache; antipyretic, externally antiseptic.
 
Mitten Shero
Shero is organic chick pea flour blended with tumeric, shallots, red onions, ginger, garlic and bessobela (sacred basil). This legume blend is a very popular vegan dish, it is tasty and easy to make. Shiro is an essential part of the Ethiopian and Eritrean cuisine. It is a favorite during the fasting seasons. shiro is a great source of protein; and when combined with vegetables and tomato salad shiro-based meals provide almost all of the average daily requirements of folate, vitamin A, C and K. Include the goodness of teff and the meal will have additional micronutrients such as iron, calcium and vitamin B6.
 
Black Cumin (Tikur Azmud)
One of the special spices known for their distinctive aroma, cumin seeds are popular in North African, Middle Eastern, Western Chinese, Indian, Ethiopian, Cuban and Northern Mexican cuisines. The spice is native to middle-east Asian region, and now grown all over the world for its flavorful seeds. The cumin plant flourishes well in sandy, fertile soil along with hot summer weather conditions. It bears small, gray-yellow color, oblong shaped seeds with vertical ridges on their outer surface; that closely resembles caraway seeds in appearance. This spice is an excellent source of minerals like iron, copper, calcium, potassium, manganese, selenium, zinc and magnesium. Copper is required in the production of red blood cells. Iron is required for red blood cell formation. Zinc is a co-factor in many enzymes that regulate growth and development, sperm generation, digestion and nucleic acid synthesis. Potassium is an important component of cell and body fluids that helps controlling heart rate and blood pressure. Manganese is used by the body as a co-factor for the powerful anti-oxidant enzyme, superoxide dismutase. The spice also contains very good amounts of B-complex vitamins such as thiamin, vitamin B-6, niacin, riboflavin, and other vital anti-oxidant vitamins like vitamin E, vitamin A and vitamin C.
 
 
Caraway Seed/Bishop’s weed (Netch Azmude)
Caraway has been called by many names in different regions, with names deriving from the Latin cuminum (cumin), the Greek karon (again, cumin), which was adapted into Latin as carum (now meaning caraway), and the Sanskrit karavi, sometimes translated as “caraway” but other times understood to mean Fennel. Caraway contains several health benefiting essential oils. Principle volatile compounds are carvone, limonene, carveol, pinen, cumuninic aldehyde, furfurol, and thujone. These active principles in the caraway seeds are known to have antioxidant, digestive, carminative, and anti-flatulent properties. Caraway has several health benefiting flavonoid antioxidnats such as lutein, carotene, crypto-xanthin and zea-xanthin. These compounds are indeed functions as powerful anti-oxidants by removing harmful free radicals from the body thus protect from cancers, infection, aging and degenerative neurological diseases.
 
Black Cardamom (Korerima)
Korerima is a frequently used spice in red sauces and in meat delicacies. Cardamom has a distinctly astringent aroma, similar to mint. It is used in Berbere sauces, in seasoning butter and other chili blends. The therapeutic properties of cardamom-oil have found application in many traditional medicines as antiseptic, antispasmodic, carminative, digestive, diuretic, expectorant, stimulant, stomachic and tonic.
 
Garlic Powder (Netch Shinkurt)
It is a very common seasoning. Garlic powder is a common component of spice mix. It is a common component of seasoned salt. Garlic cloves have amazingly high levels of vitamins and minerals. Just 100 g provides (in % of recommended daily allowance) 95% of vitamin B-6 (pyridoxine), 52% of vitamin C, 33% of copper, 21% of iron, 18% of calcium, 26% Selenium, and 73% of manganese but no cholesterol.
 
Rosemary powder (Tibs Kitel)
Rosemary is used as a decorative plant in gardens and has many culinary and medical uses. The plant is said to improve the memory. The leaves are used to flavor various foods, such as stuffings and roast meats. Charming rosemary herb is the perfect potherb to have in your kitchen garden. The plant is one of the recognized herbs for its note-worthy health benefiting phyto-nutrients, anti-oxidants, and essential acids. This delightfully exotic, sweet-flavored spice stick is traditionally obtained from the outer brown bark of Cinnamomum trees, which when dried, rolls into a tubular form known commercially as “quill.” The active principles in the cinnamon spice are known to have anti-oxidant, anti-diabetic, anti-septic, local anesthetic, anti-inflammatory, rubefacient (warming and soothing), carminative and anti-flatulent properties. The spice contains health benefiting essential oils such as eugenol, a phenylpropanoids class of chemical compound, which gives pleasant, sweet aromatic fragrances. Abyssinian Thyme/Tosign

Clove/Kerenfud
Clove, common name for a tropical tree of the myrtle family, and for its dried flower buds. The clove tree is a small-to medium-size evergreen; native to the Moluccas, eastern Indonesia, it is now cultivated elsewhere in the Tropics. The flowers are small and produced in great profusion in clusters. The leaves, flowers, and bark are aromatic. The spice contains health benefiting essential oils such as eugenol. It is a phenyl-propanoids class of chemical compound, which gives pleasant, sweet aromatic fragrances to the clove-bud. Eugenol has local anesthetic and antiseptic properties, hence; useful in dental care essentials as well as in treatment procedures. Additionally, this spice is a good source of vitamin-K, vitamin-B6 (pyridoxine), thiamin (vitamin B-1), vitamin-C and riboflavin. Coriander/Dimbilal/

As in other spices, coriander is also rich in of dietary fiber. 100 g seeds provide 41.9 g of fiber. Much of this fiber is metabolically inert insoluble fiber, which helps increase bulk of the food by absorbing water throughout the digestive system and help easing constipation condition. Unlike other dry spice seeds that lack in vitamin C, coriander seeds contain an ample amount of this anti-oxidant vitamin. 100 g of dry seeds provide 21 mg or 35% of RDI of this vitamin.
 
Fenugreek/Abish/
Strongly aromatic and flavorful fenugreek seeds are popular spices widely used for their well recognized for culinary as well as for medicinal properties. Traditionally, fenugreeks are being used to cure digestive problems and to improve breast milk secretion in the nursing mothers. Fenugreek seeds are rich source of minerals, vitamins, and phytonutrients. 100 g seeds provide 323 calories. The seeds are a very good source of soluble dietary fiber. Soaking the seeds in water makes their outer coat soft and mucilaginous. 100 g of seeds provide 24.6 g or over 65% of dietary fiber.  Its seeds have been used in many traditional medicines as a laxative, digestive, and as a remedy for cough and bronchitis.  If used regularly, fenugreeks may help control cholesterol, triglyceride as well as high blood sugar (glycemic) levels in diabetics.  Fenugreek seeds added to cereals and wheat flour (bread) or made into gruel, given to the nursing mothers to increase milk synthesis.
